Clean Eating Tuesday
Holy terrible diet choices, Batman! This summer has been a bonanza of margaritas, birthday cake, bbq (like, real Texas bbq) and a parade of ice cream cones, strawberry shortcake and chocolate! It is been tough on my waistline. My goal was to lose all the baby weight before the baby turned one. Well, let me assure you, year one and come and gone and those pounds are still sticking around.
Well, I have decided that it is time to get this choo-choo back on its track! After having fries and a Goodnight Burger at HopDoddy at lunch today (damn you, Austin! so many delicious places to feed your face), I decided that tonight what the hubs and I needed was a nice simple veggie and lean protein filled evening meal. And that, my friends is just what we had. Is it a complicated culinary challenge that left us in awe of our kitchen skills? No. Was it fresh and delicious? Um, yes!
This mean is so absolutely simple. Marinating chicken breast in some lemon, olive oil, garlic, salt, pepper, and rosemary gives this meal a really lively and summery pop! It also lends this meal and very Greek feeling, and who doesn't love soulvaki? Only instead of wrapping the chicken and veggies in pita, it is resting on a bed of beautiful spinach and kale. Truly, it is delightful! The hubs piled his high with tomato, bell peppers, red onion and feta. I skip the red onion and add radish instead. But really, this meal is so basic that truly anything goes on it. Next time, I think we'll skip the feta and layer in some goat cheese, almonds and fresh strawberries.
